Outdoor Adventures: Birding and Ornithology for Beginners by Dr. Steven Richards

Description:
An introduction to recreational birding and avian ecology with an emphasis on developing field identification skills. Five classroom lectures and three field experiences are designed to offer a crash course in the basics of birding and nature appreciation. Grab your binoculars, study your field guides and hold on fast. Bring your intellectual curiosity and learn along with others while in the classroom and the great outdoors.

Low Relief Casting by Steven Romano, MBAL

Description:
Casting is a beginner sculpture course. Students will learn the basics of clay hand building, forming molds, and creating casts. Students learn how to produce a low relief plaster sculpture that they keep. Students will have the opportunity to apply hands on creativity, while learning the basics of casting low relief sculpture.

Faith, Food, and Nutrition in Health by Dr. Jenelle Robinson

Description:
An introductory study of religious dietary laws, spiritual principles used with food, along with basic nutrition education to enhance health and well-being.

Description:
This course teaches students basic knowledge of French for travel or social purposes. Students will also be able to read menus in French and to understand French terms that are often used in English, e.g. C’est la vie, coup d’état.

Basic Nutrition by Dr. Aaron Settle

Description:
This course examines basic nutrition principles and strongly considers the metabolic requirements needed for a variety of daily activity as well as the impact that physical activity, training and scientifically directed nutrition can have on one’s body composition and human performance.

This course examines basic fitness application principles and strongly considers the individual differences with the human body in regards to personal training. The student examines program design, proper exercise technique, risk management, and goal setting.

This course is a study of youth sports in America. Topics will center on the good, the bad, and the ugly in sports. At the end of the course, students will be able to decide whether sports are worth the time and energy. The course will allow students the freedom to form their own opinion about sports through peer and instructor-led discussions.

Evocative Memories: Writing about the Special Events in Your Life by Cathy Pleska, MFA

Description:
This class is an opportunity to write memoir and personal essay pieces about the meaningful events in our lives. It allows us the opportunity to explore reasons and rationales, to celebrate and to understand, to explore the deeper meanings or to just allow it to be remembered as special and sometimes life changing. Via a series of exercises, students will develop one or two memoir pieces or personal essays while writing in a safe environment in a workshop atmosphere.
